Meander through a fragrant herb garden in a 19th-century farm and then savor a delightful lunch of traditional Slovenian dishes. As an introduction to the country’s limestone karst region, you will pause to take in the sweeping views from a castle that overlooks the Gulf of Trieste. The culinary experience unfolds at a charming local family homestead, where a husband and wife grow and prepare herbs and dishes themselves. You'll discover the herbs they cultivate for culinary and medicinal purposes, such as sage, fennel, and balm mint. The karst terrain also nurtures the growth of fragrant lavender, adding to the region's aromatic allure. As you will discover during the lunch that follows, many of the herbs have been used in the dishes. To complement the meal, you will be served Teran wine, a dark-ruby wine sometimes called King of the Karst.

Explore a wetland nature reserve on reclaimed land that now supports an abundance of indigenous flora and fauna. Salt pans covered much of this area for centuries, and it wasn’t until about 50 years ago that the brackish wetlands became an important habitat for flora and fauna. As you walk through this wonderfully unique ecosystem, a naturalist will describe the transformation of the reserve and how environmentalists prevented it from becoming an industrial zone. Nearly 250 types of birds—more than half the species in the entire country of Slovenia—have been spotted there, including Eurasian reed warblers, black-winged stilts and squacco herons. You can also expect to see a huge variety of colorful butterflies flitting about. Halophytes are among the more intriguing plants found in the wetlands, as they thrive in salty ground. From a distance, these succulents appear to have ice on their leaves, but it is actually dried salt that the plants exude from their glands.

You’ll journey to the ancient place of Mayan pilgrimage known today as Chacchoben, also known as "The Place of Red Corn". At the pier, you’ll be greeted by a bilingual guide who will direct you to an air-conditioned bus. Onboard the bus your guide will brief you on the interesting history and unique attributes of this sacred Mayan site. Upon arrival at Chacchoben you’ll be surrounded by jungle. Your guide will escort you through the ruins, giving you a complete explanation of the sacred temples and other structures seen there. See original red paint on the stucco walls of one of the pyramids and the temple where a mural was found showing the astronomical positions of the planet Venus. You’ll have time to climb the Gran Basamento taking you above tree level. Here archaeologists found ceremonial offerings dating to around 1000 B.C. Your guide will also explain about the wildlife and medicinal plants that are used by the modern-day descendants of the ancient Mayan people. During the tour, you will reach a structure known as the Gran Basamento, which is not a pyramid, but an elevated platform.

Settle in for a panoramic driving tour through Porto as a prelude to dining on dishes made to pair with the city’s namesake port wine. While traveling through the city’s historic district, which is so architecturally important that UNESCO declared it a World Heritage site, you will pass landmarks such as the Casa da Música concert hall and the cathedral where famed Portuguese explorer Henry the Navigator was baptized in the late 1300s. This immersion into Porto will also provide insight into the production of port, the fortified wine produced in the Douro Valley. Taylor’s Port Lodge in nearby Gaia offers the ideal setting for an exquisite tasting of appetizers created especially to pair with these wines. Tour the famous cellars at Vila Nova de Gaia while learning the history of Port wine. The family run company was founded hundreds of years ago in 1692, and has since been the best known and well respected winery in the area.

Discover the charms of several villages in western Malta, where you will observe artisans practicing age-old crafts and get a genuine feel for daily life. Antoine tan-Newl is one of the island’s few weavers that still uses traditional techniques and watching him create items such as handmade rugs, blankets and bags on a wooden loom is a fascinating experience. He may even invite you to try your hand at weaving. In the nearby village of Żebbuġ, you will see the locals playing bocci, a traditional sport that is closely related to the French game of petanque and Italian bocce. You will be welcome to join the game or just sit back and enjoy locally sourced snacks that may include stuffed green olives, an area specialty. You will also stop in the village of Santa Venera for an introduction to traditional Maltese musical instruments such as simple whistles made from wheat stems and reeds.

Visit the Melanesian village of Hnathalo, where ancient customs are still practiced religiously and traditional island values are held in high esteem. Hnathalo is also the name of the tribe living there. Following a welcoming coconut drink, you will walk among the village’s thatched huts, hand-carved totems and open expanses shaded by swaying palms and towering Royal Poinciana trees. It will be like traveling back in time, as little has changed over the years because traditional Melanesian ways are still fervently practiced in Hnathalo. That is especially true in the preparation of dishes such as bougna, a concoction that you will sample after seeing how it’s cooked over red-hot stones in a cleverly designed ground oven. You will also be invited to enter the circular Chief’s Hut, one of the largest of its kind in New Caledonia, and view a church that French Catholic missionaries constructed in 1883. It is decorated with period furnishings that enhance the authenticity.

Enjoy the serenity of several natural settings, including the Big City Park in Tivat, where you will plant a tree that will benefit the Earth for years to come. The urban park is a green oasis full of indigenous and exotic plants that include eucalyptuses, magnolias, Chilean firs and unusual herbs. By planting a small tree on the grounds, you will add to the botanical diversity and perhaps most important help the environment, as trees absorb harmful carbon dioxide and release oxygen into the air. A bit of free time in Porto Montenegro will follow, after which you will wander through Solila Reserve on the Bay of Tivat. Although salt was once produced in the pools along the shore, birdwatching is now the main activity in the protected wildlife reserve. Keep an eye out for auks, ibises and curlews. A leisurely and informative walk through Old Town Kotor will perfectly complement the experience.

The island of Mykonos is world famous for its stunning scenic beauty comprised of windmills, sparking bays, superb beaches, white houses and churches with their colorful blue and red domes. You'll pass by Ornos Beach, one of the most cosmopolitan beaches on the island with an abundance of luxurious hotels, tavernas and yachts mooring offshore.
You’ll make a short photo stop at the beach of Kalafatis to experience one of the island's beautiful beaches and to enjoy the breathtaking view. As you head to the center of the island, you'll visit the village of Ano Mera and the Monastery Panayia Tourliani. You’ll also have a chance to enjoy ouzo and Greek appetizers in the peaceful little square of the village.

Travelling through Jamaica's beautiful countryside, you'll drive past some historic sites and districts on the way to Dunn's River Falls. Described as a living and growing phenomenon, the waterfall continuously regenerates itself from deposits of travertine rock, the result of precipitation of calcium carbonate from the river, as it flows over the falls. The small dome-shaped cataracts are usually associated with thermal spring activity found in limestone caves. Experience the thrill of climbing the waterfall, in a human chain led by experienced Falls Guides. Pause at the 'massage parlour' and experience the soothing effects of the water as it cascades over the rocks, to the sea. For the less adventurous, view the activities of the more intrepid from the "safe" vantage point of the terrace or deck.
